Inspired by Jamie Oliver’s new TV show Super Food, my mum recently bought the Super Food book and we have been making the delicious food all week.
All the recipes within Jamie’s new book are nutritionally balanced and this smoothie pancake is sure to set you up for a great healthy day.
Ingredients that you will need for 4 portions:
320g Blueberries or raspberries
1 ripe banana
170ml semi-skimmed milk
1 large egg
250g wholemeal self-raising flour
4 tablespoons natural yoghurt
30g mixed unsalted chopped nuts, such as walnuts, pecans, hazelnuts
Simply chuck all of the ingredients into a blender (excluding the topping ingredients) to create the smoothie mixture and should look similar to the picture above.
Put the batter into a large non-stick frying pan and flip the pancakes every 30 seconds until cooked to your liking.
I love this recipe and it is very easy to make and keep in the fridge for a few days for a healthy and tasty breakfast.
